Jane’s Mock Chicken Pot Pie

Gawd, this is good. This is the lazy man’s pot pie, but don’t forget to BOIL the ingredients BEFORE you add the raw biscuits, or else you’ll be left with a gooey-unappetizing-biscuit-y mess. Eat hearty!

Get out an oven proof dutch oven or large pot.

Dice one onion and 4 cloves of garlic.

Cook in the pot with olive oil till brown.

Add one bag of frozen peas and carrots. Also, add one bag of frozen corn. Jane also adds one can of green beans. (She also has used fresh veggies for all of this - this is the quick version, remember).

Add cornstarch to thicken - start with a few tablespoons. Add enough milk, salt and pepper to make a creamy base.

Now add a store-bought rotisserie chicken (or leftover turkey or chicken that you cooked the night before - a great way to use up leftovers!) that you have pulled all the meat off of and chopped up well. Toss the carcass or freeze it for stock (who even does that?)

BOIL

Open a tube of pop-out biscuits. Place biscuits on top of chicken mixture and bake according to the biscuit tube directions.
